Explore The Historic Balsamic Vinegar Factories And Lush Vineyards Of The Beautiful Modena Hillside Region

Discover the secrets of authentic Balsamic Vinegar in the picturesque hills of AltaModena, a region renowned for its ideal climate and fertile soil. Your journey begins with a guided walk through family-owned vineyards, where you will learn about the local terroir and the specific cultivation of Trebbiano and Lambrusco grapes. These varieties are the essential foundation for producing high-quality vinegar, and understanding their growth cycle is the first step in appreciating the final product's depth and complexity.

Transition from the fields into the production area to witness the initial stages of the process, including the careful cooking of grape must. This critical step concentrates the natural sugars, which are vital for achieving the distinctive flavor profile associated with traditional Balsamic Vinegar. You will then explore the aging rooms, where rows of barrels made from oak, cherry, and other fine woods house the vinegar as it matures over many years, absorbing the unique essences of the wood.

A highlight of the experience is a visit to the dedicated Balsamic museum, which chronicles the history of the Sereni family. Since the early 1900s, this family has been at the forefront of vinegar production, and the museum showcases how their methods have evolved while remaining firmly rooted in time-honored traditions. This historical context provides a deeper appreciation for the patience and precision required to maintain the integrity of this artisanal craft in a modern, fast-paced world.

The tour culminates in a tasting of five exquisite varieties of Balsamic Vinegar, each representing a different stage of aging and flavor development. You will learn how to identify the subtle nuances imparted by the various woods and the length of the aging process. This sensory experience offers a perfect conclusion to your visit, leaving you with a newfound respect for the dedication and passion that define the culinary landscape of the Modena hillside region.

Marcello was an incredible host! He was passionate about the product, answered all of our groups many questions, and let us sample multiple things (even things that weren’t part of the main tasting). The experience is free, but we of course couldn’t resist taking some of his incredible product home.

This is a definite must see for anyone curious about Aceto. Marcello invited us into his lovely cellar and shared with us all his knowledge about the production of real modena based aceto and the fascinating history behind it. You can feel the passion he has for his product. The tales are then joined by a tasting were you get to experience the different variants he produces. This was definitly one of my Italy trip highlights! Thank you Marcello.

AMAZING EXPERIENCE!!! Highly recommend this small local family owned acetaia! They offer free tours! Our tour guide Marcello welcomed us to their family home. He was very upbeat and educational on balsamic. We learned A LOT from this and it was great to support a multigenerational family business! Their balsamic was some of the best we’ve had and we can’t wait to buy more. We also had no issues with the balsamic through airport security, other than the agent laughing at us with all our bottles. Haha. Definitely, definitely, definitely come here and support them if possible. Also their prices are HALF of the cost at the airport, so way better to buy directly!
