Step into the heart of Puglia’s olive oil tradition with a journey through a medieval underground mill near Martina Franca, nestled between Ostuni and Alberobello. Carved deep into natural rock and expanded by human hands, this frantoio ipogeo was once the workplace and home of trappitari, who lived underground during the harvest season. As you explore the labyrinth of chambers, cisterns, and carved machinery, your guide will bring to life centuries of history, folklore, and the daily life of the men and animals who pressed olives to produce olio lampante, the precious oil that once lit homes. The experience offers a rare glimpse into the evolution of olive oil production, from manual hand-picking and mule-powered grinding wheels to modern methods that honor tradition while ensuring quality. The tour concludes with a guided tasting of local extra virgin olive oils, accompanied by fresh bread. You will discover how to detect bitterness, spiciness, and fruity notes, and learn the secrets behind selecting, storing, and using authentic olive oil. This immersive experience blends history, culture, and gastronomy, giving you a deeper appreciation of Puglia’s culinary heritage. Perfect for food lovers, curious travelers, or anyone seeking a meaningful connection with the land and its traditions, the visit feels like stepping back centuries while remaining just a short walk from Martina Franca’s elegant old town.

Giuseppe is very passionate and a natural storyteller.

Informative and original

It was fun to learn a bit more about how the oil was made. But we certainly didn't think it was worth 39 euros, and we were upset when we saw that it only costs 25 euros on the official website.

We took the Olive grove tasting and tour. Really well done, informative, fun, and a great tasting the end.

Olive orchard and ancient milling tour was very informative and engaging - our guide was an 8th-generation family owner. He graciously shared lots of cultivation ideas and milling history with our group. Very interesting! We all loved the tasting at the end of the tour - well worth the trip

Fantastic! Mid winter we were fortunate to have a wonderful & informative tour. Astonishing place! I have recommended it to many friends. Would love to return in fall & stay for a few nights.

One of the most amazing parts of our trip through Puglia was this tour! So interesting and informative. I feel like an expert;) There's a 3000 year old olive tree that is waiting for your photo op. Go!

We did the farm and olive grove tour and tasting. It was very good and informative. Our guide spoke excellent english and was able to answer any questions. The grove is fairly level and seeing olive trees planted by the Romans, and earlier people, was amazing. A portion of the tour goes underground to the ancient crypt where the olives were pressed. This portion of the tour would be impossible for anyone with mobility issues. The blind olive oil tasting was very fun and educational. Well worth the price. There was no sales pressure to purchase the product but there was a small store.
