Herdade da Fonte Santa Showcases Artisanal Olive Oil Production in Alto Alentejo

In the heart of Portugal’s Alto Alentejo region, Herdade da Fonte Santa is highlighting a tradition-driven approach to premium olive oil production rooted in craftsmanship, sustainability, and respect for the land. Spread across 90 hectares of cultivated olive groves, the estate combines agricultural expertise with natural processes to produce high-quality extra virgin olive oil.

The groves feature a diverse selection of olive varieties, including Galega, Arbequina, Cobrançosa, Picual, Cordovil, and Frantoio. Each contributes distinct flavor profiles, helping create a balanced and aromatic final product that reflects the complexity of the region’s terroir and growing conditions.

Harvesting is carried out using a semi-manual method, ensuring careful selection of olives at peak ripeness. The cold extraction process preserves the oil’s natural flavors and nutritional qualities, resulting in a fruity, well-rounded extra virgin olive oil that emphasizes purity and depth without additives or preservatives.
