In the heart of Chiavari’s historic center, surrounded by ancient alleys, stone porches, and colorful buildings overlooking the sea, I invite you to immerse yourself in an intimate and authentic culinary journey celebrating the flavors of the Ligurian coast. You will be welcomed into my charming Genoese-style house, nestled in one of the city’s most evocative corners, where a guided tasting of the Gulf of La Spezia’s prized oysters awaits. Carefully selected from the finest local sources, these oysters are paired with an array of exceptionally fresh seafood, including red prawns, scampi, anchovies, tuna, and marinated swordfish. Each dish, whether raw or cooked, draws inspiration from traditional Ligurian seafood cuisine while incorporating delicate creative touches to highlight the natural flavors of the sea.
Throughout the tasting, every bite is enhanced by a glass of Ligurian Vermentino or a local sparkling wine, chosen to complement the freshness of the seafood. As you savor the flavors, I will share engaging stories about the gastronomic culture of our coast, including traditional farming techniques, fishermen’s customs, and the rich heritage of the territory. This experience not only delights the palate but also offers a deeper understanding of the Ligurian maritime tradition, turning a simple tasting into an immersive journey through the history, culture, and exceptional cuisine of the region.

Oysters were absolutely delicious! Will definitely be back for more. The staff probably could not be more apathetic and disinterested if they tried. I came in through the back by accident and took a seat, not knowing orders must be made at the counter (some signs around the restaurant might help in this regard), I was sat there a good 10-15 min with no one providing any kind of assistance. I had to get the attention of a waitress who then informed me of the procedure to order at the counter. Every single person working there looked as lifeless as the oysters being served, I didn't see any staff member smile once. It just made the entire experience a little glum... The setting itself was nice and comfortable enough, but I felt like I was imposing by simply being a customer... I think some motivation is needed for the staff?

We used to live in New Orleans, La. USA which is renowned for its oysters and I have to say that Sligo Oyster Experience has the best oysters we have ever had anywhere in the world! We had the raw, herb baked and cheese baked oysters. This is a MUST stop if you are anywhere near Sligo. PS, the vegetable soup is divine!

I took a group on the private oyster farm tour in Strandhill yesterday. They had such an amazing time. Set in one of the most scenic parts of Ireland, Aisling was a wealth of knowledge about the fine art of oyster farming and provided the group with plenty of world-class yet locally sourced cuisine to sample. I'll definitely be recommending visitors to enjoy this one of a kind experience.

We did the Sligo Oyster Experience tour of the oyster farm with Ashley and it was a really cool and unique experience. They gave us the full history of the farm and walked us through the process for farming, harvesting, processing, and shipping oysters. We got a lesson on shucking and got to slurp down some fresh oysters at the end with a beautiful view. Would recommend!

We can not express in words how great Aisling, Glenn and there team at Sligo Oyster Experience are. Our group traveled all over Ireland for 11 days, and this was by far our favorite time, and I would say it was due to Aisling's love for her job and lifestyle. She took us in later than normal for the start of our time, due to we went on a fishing excursion that am. She started off with history of herself, family and the farming process, and you can tell with her excitement, she loves what she does. They had a warm fire started for us table side, with a complete spread of crackers, cheese, wine, and condiments for the oysters laid out for us at the end, and noted as many oysters as you could ever imagine shucked by Aisling and Glenn. Our group even gave her a little something that she stated she never had before, we roasted oysters for her on her fire pit, and yep, she stated she loved it. Make time for this one, you will get the best of the best of oysters, fellowship, and a new friendship that will last a lifetime. #lovewhatyoudo
