Transport yourself to the vibrant streets of Bahrain and the wider Middle East with Noor Murad, chef and former head of the Ottolenghi Test Kitchen, as your guide. In this immersive cooking experience, you’ll explore the rich diversity of Middle Eastern flavors while creating a generous and exciting spread inspired by recipes from her highly anticipated cookbook, Lugma. Designed to be both joyful and hands-on, the class invites you to discover bold spices, fragrant ingredients, and techniques that bring these dishes to life.

You’ll learn how to cook Noor’s signature tomato, potato, and saffron rice with a perfectly fluffy center and irresistibly crispy base, then make a loomi and spice rub to transform spatchcocked chicken into a stunning centerpiece with crispy skin and juicy meat. The menu continues with a fresh Springtime Fattoush featuring crispy Lebanese pitas, radishes, and pomegranate in a bright sumac dressing, alongside Daqoos, a sharp and slightly spicy Gulf sauce. To finish, you’ll create a playful Arab Mess dessert, reimagining a British classic with sumac, lime, pomegranate molasses, and Persian candy floss, rounding off an unforgettable Middle Eastern cooking journey.
