At Herdade da Fonte Santa, our passion for crafting an exceptional product is deeply rooted in the rich tradition of olive oil production in Alto Alentejo. Spanning 90 hectares of olive groves cultivated under an integrated production regime, we have created a unique space where nature and expertise come together to produce olive oil of the highest quality. The groves are home to a diverse array of olive varieties, including Galega, Arbequina, Cobrançosa, Picual, Cordovil, and Frantoio, each contributing its distinct characteristics to the final product.
Our harvest process is semi-manual, a labor-intensive method that ensures only the finest olives are selected at their peak of ripeness. The cold extraction process we use preserves the natural flavors and beneficial properties of the olives, resulting in a fruity, aromatic extra virgin olive oil with a remarkable balance and depth of taste. The careful selection of olives and our commitment to sustainable practices ensure that each bottle of our oil reflects the essence of the land and the dedication of our team.

Our olive oil tasting, hosted by Adrian, was absolutely fabulous.. He was informative and engaging. We sampled a wide range of olive oils. I was blown away by the chocolate and orange combo. I would highly recommend this experience.
It was an amazing experience. The Chef Adrian was super competent, and available to answer any and all questions. We spent a couple hours chatting tasting some nice local wines all the while learning how to cook 2 dishes from local cuisine. Great experience, I absolutely recommend it!
I did the paella and salmorejo cooking class with Adrian and Gloria. It was absolutely fabulous and they were a delight to spend two hours with. I can’t wait to try both recipes at home. I also learned a lot about the region, olive oil production and the various ingredients. One key thing is I’m gluten free (celiac) and they were able to modify the recipes for me. Overall, one of the best experiences in Spain I’ve had. I highly recommend them!
Huge thank you to Adrian for an amazing wine tasting evening. My wife and I got to try 5 or 6 delicious local wines that were paired beautifully with local cheeses. Adrian was extremely knowledgeable and brought a lot of humor to the evening. We will be definitely be returning to ‘ Things to do Córdoba’ next time we are here and would also like to try the local tapas tour that they offer.
